Can anybody recommend Books that are set in Spain or deal with anything Spanish, not necessarily by Spanish authors.

That's rather a wide brief!
I presume that you mean books in English, not Spanish?
There is, of course, 'Don Quixote', by Cervantes. A new translation, by Edith Grossmann has been published this year. It's on my 'to read' list, or will be when it's out in paperback!
At the other end of the spectrum, there are the 'new life in foreign country' type books, such as 'Spanish Lessons' by Derek Lambert. This is of particular interest to me, as the property in question belonged to my mother-in-law, and was the location of my first visit to Spain. Lambert says some very nice things about my brother-in-law!
Otherwise, I could recommend a couple of cookery-books that have some mouth-watering descriptions of the country, as well as the food, if they would be of interest. (Can't remember a recipe for goat soup, 'though!)

Sorry, I'll try to be more specific.
I like to read mainly fiction (in english) but with a Spanish theme, set in Spanish locations, Spanish people. I've recently finished 'Shadow Of The Wind' - Carlos Ruiz Zafon other books read include the one megustaleer mentioned 'Don Quixote' , 'Snowball Oranges', 'Manana,Manana' by Peter Kerr.
My interest also, is anything to do with the Spanish Civil War, books read include..

Brother Against Brother - Frank thomas
Telegram from Guernica - Nicholas Rankin (Still to be read)

'Monsieur quixote' Graham greene.
A story about a priest in rural Spain. Very funny at times. A great read!!
